Another one of our favorite things to grill is BBQ chicken and pineapple. Ingredients: 2 or 3 - boneless skinless chicken breasts BBQ Sauce 1 whole pineapple First you cut the chicken into chunks, then put into a ziplock bag. Then pour in the BBQ sauce (we use sweet baby ray’s) so that the chicken is completely covered. Marinate for at least 1 hour, but 4 hours (or more) is best! The longer it marinates the more flavor it will have. Once it’s marinated for as long as you want cut up the pineapple in chunks. Then use skewers and alternate the chicken and the pineapple. Place on a preheated grill and cook until the internal temperature of the chicken is 165°. Serve with your favorite BBQ sides: salad, pasta salad, chips, etc. Enjoy!
