National Blonde Brownie Day

Image
This   Sunday January 22, 2023 was National Blonde Brownie Day (or blondies).  So, I made sourdough ones, and they are delicious, if I do say so myself.  One of the things I have longed to do is make things on my own.  I'm not quite there yet, but I can combine and adjust multiple recipes and add in things that we want and take out things that we don't and make them my own.  So, like I said, almost there.  I found several recipes on Pinterest and took things from all of them, then added in some sourdough starter, and made it my own.  Heavenly Father is helping and blessing me by fulfilling a desire of mine, and I am so very grateful! Here is the recipe for  Sourdough Blonde Brownies Ingredients: 1 stick of Salted Butter, softened 1 cup Packed Dark Brown Sugar 3/4 cup Granulated Sugar 3 Eggs 2 tsp Vanilla 1/3 cup Sourdough Starter 1/4 tsp Salt Some Chocolate Chips Some Brown Sugar Directions: Preheat oven to 350°. Line a 13x9 baking pan with p...

BBQ Chicken and Pineapple Kabobs

Image
Another one of our favorite things to grill is BBQ chicken and pineapple.  Ingredients: 2 or 3 - boneless skinless chicken breasts BBQ Sauce 1 whole pineapple First you cut the chicken into chunks, then put into a ziplock bag. Then pour in the BBQ sauce (we use sweet baby ray’s) so that the chicken is completely covered. Marinate for at least 1 hour, but 4 hours (or more) is best! The longer it marinates the more flavor it will have. Once it’s marinated for as long as you want cut up the pineapple in chunks. Then use skewers and alternate the chicken and the pineapple. Place on a preheated grill and cook until the internal temperature of the chicken is 165°. Serve with your favorite BBQ sides: salad, pasta salad, chips, etc. Enjoy! The chicken is delicious, the pineapple is sweeter, and they taste so good together! Sometimes we even add bacon to the kabobs! We bought the skewers from Target! Aren’t they adorable?

Pizza Friday

Image
Tonight I made individual pizzas. I used pre-made biscuits (you know, in the tube that you keep in the fridge), my homemade pizza sauce, shredded mozzarella cheese, and pepperonis. I gently smooshed and pulled the biscuits so they were bigger. Then I put the pizza sauce on it. I added about a handful of mozzarella cheese on top of the sauce and put pepperonis on half of them (4 biscuits). I cooked them at 350° for about 15 minutes (we have a convection oven). Once the cheese was a golden brown I pulled them out and put them on plates. I didn’t cut them, but I should have. Here is the ingredients. 1 can pre-made jumbo biscuits (8 count) Shredded Mozzarella Cheese Pepperonis  Pizza Sauce I used tin foil lined cookie sheets to cook them on Here are some pictures: The biscuit before I made it bigger After I made it bigger Add the pizza sauce Add the cheese Add pepperonis (I only did half since we have kids that just like cheese). All done! Obviously you can add whatever toppings...

Bacon Potato Soup

Image
We found a recipe for potato soup on the Internet. It had stuff that we didn’t want in it (like celery and onions) and stuff that was missing. Also, they only used chicken broth and to us didn’t seem very creamy, like a potato soup should be. So I created this one! Bacon Potato Soup: Ingredients- 6-7 Medium Potatoes 2 10.5 oz cans Cream of Chicken Soup 2 “cans” of Milk (*I’ll explain below) 1 14.5 oz can Chicken Broth 2 tsp Onion Powder (heaping) 1/4 tsp Pepper 1 package Bacon 2 bricks Cream Cheese Directions- Put the two cans of soup and the chicken broth into the crockpot. *Use the empty soup cans and fill with milk (both or just do one can twice. I use both to help get all the stuck soup out of the can). Add the onion powder and pepper. Mix well. At this point I turn on the crockpot on low. Peel and cut up the potatoes into small chunks. Carefully add them to the soup mixture in the crockpot (it will splash). Cover. Cook the bacon until it’s crispy. Break into small pie...
