February Dinner Calendar

  Here is our February dinner calendar. I’ve told you all before that we have a house full of picky eaters. So our dinners don’t change much. Every once in awhile I’ll try something new. If most of us like it, it gets put on our List . If most of us don’t, it doesn’t make the list. Anyway... here is February:

Here is our November dinner calendar. The picture isn’t very good, but you can still see it! If you’re using it for ideas, I’m sorry it’s late. I e had a bad headache the last couple of days.

Taco Pan Pizza

We have had this recipe for years.  I can't even remember where we got it from.  Nick and I think it's just delicious.  The kids think it's okay, but they hate the sweetness of the corn bread crust.  I think that's the best part about it.   So...  You make it for yourself and decide! Here is the recipe: Taco Pan Pizza 1 egg 1 pkg Taco Seasoning* 2 pks Corn Muffin Mix (we use Jiffy) 1 1/4 cup Salsa 1/4 cup Milk 1 can Refried Beans 1lb. Ground Beef 1 cup Shredded Cheese 8 oz. Sour Cream 1 cup Shredded Lettuce 1 chopped Scallion (we don't add this) Heat oven to 400° . Grease 15x10x1 baking pan (I use a big silver cookie sheet). Stir egg, corn muffin mix, and milk in bowl.  Once mixed well, with damp fingers spread and pat mix onto the pan.  Bake 10 minutes (until edges are a light golden brown).  Cook ground beef so it's brown and no longer pink (I start this cooking, then to the corn muffin mix, and continue cooking the beef while the "cru...

  Here is our October dinner calendar. Yes, I’m finally ahead of the month. 🤣 Remember... if there is ever a recipe that you want, please don’t hesitate to ask! I changed Saturday from Grill meals to Crockpot meals. October starts to get chilly here and not a good idea to be grilling. Haha!

Twice Baked Potatoes

  A really yummy side dish is twice baked potatoes. There are a lot of variations, so don’t be afraid to add stuff you like to them. For our family of seven we use six potatoes. This is one way we make them. I don’t usually measure all the ingredients (I’ve tried to measure since putting our recipes on this blog, but not always) so you will have to adjust things to your liking. 6 medium potatoes 2 lb. bag of shredded cheese (we use cheddar and Monterey Jack blend). Cooked Crumbled Bacon Olive Oil Salt Milk Sour Cream Butter 1 tbsp. Onion Powder 1/4 tsp. Pepper 1/2 tbsp. Salt Use a fork and poke holes in the potatoes. I do four stabs on top and bottom. You don’t have to, but you run the risk of them exploding in the oven. Drizzle olive oil (or whatever oil you like) over each side of the potatoes and sprinkle with salt. Rosemary Ranch Chicken Kabobs

My dad found this recipe and it is delicious. I’m not sure where he found it, but we love it so much we wanted to share. Rosemary Ranch Chicken Kabobs 1/2 c Olive Oil 1/2 c Ranch Dressing 3 tbsp Worcestershire Sauce 1 tbsp Minced Fresh Rosemary 2 tsp Salt 1 tsp Lemon Juice 1 tsp White Vinegar 1/4 tsp Black Pepper 1 tbsp White Sugar 5 Skinless Boneless Chicken Breasts  Add all ingredients (except chicken) into a ziplock bag and mix. Cut up chicken into chunks and add to mixture, mix, and marinate for at least 1 hour in the fridge (we like to marinate for 3-5 hours or longer). Barbeque on skewers and cook until no longer pink & juices run clear. *Variation* After marinating the chicken, pour chicken and marinate in a sauce pan or in a cast iron pan and cook either on the barbeque or on the stove.

Chicken Nachos

We found a recipe for chicken nachos awhile ago. It called for stuff we didn’t have and stuff we didn’t want in it, so we made up our own. They are so yummy! We cook the chicken mixture in a small crockpot. We serve them with tostitos bite size tortilla chips, nacho cheese, sour cream, shredded Mexican cheese blend, and olives. We don’t usually have guacamole, but when we do it’s delicious! Sometimes we have salsa with it. Here is the recipe: 1 can (14.5 oz.) Diced Tomatoes 1 can (7 oz.) Diced Green Chilies 1.5 lbs. Boneless Skinless Chicken Breast (2 half chicken breasts) 1/2 tbsp Onion Powder 1/2 tsp Chili Powder 1/2 tsp Ground Cumin 1/2 tsp Salt 2 quart crockpot Drain water from diced tomatoes and green Chili’s. Add to a small crockpot. Add onion, chili, cumin, and salt and mix well. Set chicken on top and cover with lid. Cook on low for 3 hours and turn chicken over. Cook for 2 hours, then open and shred the chicken (you can use two forks or a hand mixer. **If you use the hand mixe...

Pizza Friday

  Tonight I made individual pizzas. I used pre-made biscuits (you know, in the tube that you keep in the fridge), my homemade pizza sauce, shredded mozzarella cheese, and pepperonis. I gently smooshed and pulled the biscuits so they were bigger. Then I put the pizza sauce on it. I added about a handful of mozzarella cheese on top of the sauce and put pepperonis on half of them (4 biscuits). I cooked them at 350° for about 15 minutes (we have a convection oven). Once the cheese was a golden brown I pulled them out and put them on plates. I didn’t cut them, but I should have. Bacon Potato Soup

We found a recipe for potato soup on the Internet. It had stuff that we didn’t want in it (like celery and onions) and stuff that was missing. Also, they only used chicken broth and to us didn’t seem very creamy, like a potato soup should be. So I created this one! Bacon Potato Soup: Ingredients- 6-7 Medium Potatoes 2 10.5 oz cans Cream of Chicken Soup 2 “cans” of Milk (*I’ll explain below) 1 14.5 oz can Chicken Broth 2 tsp Onion Powder (heaping) 1/4 tsp Pepper 1 package Bacon 2 bricks Cream Cheese Directions- Put the two cans of soup and the chicken broth into the crockpot. *Use the empty soup cans and fill with milk (both or just do one can twice. I use both to help get all the stuck soup out of the can). Add the onion powder and pepper. Mix well. At this point I turn on the crockpot on low. Peel and cut up the potatoes into small chunks. Carefully add them to the soup mixture in the crockpot (it will splash). Cover. Cook the bacon until it’s crispy. Break into small pie...

Yes, Melissa is a Star Wars nerd! She would watch it over and over when she was 3, and couldn't get enough of it. She still loves it that much. So in honor of May 4th, she decided to make a fun dinner. She made Lightsaber Dogs, Vader Tots, and Yoda Ears. Then for dessert she made Death Star Brownies. After dinner we watched Star Wars IV - A New Hope. (Please excuse our messy house!) It was a fun night and hopefully the kids enjoyed it!
