Bacon Potato Soup

We found a recipe for potato soup on the Internet. It had stuff that we didn’t want in it (like celery and onions) and stuff that was missing. Also, they only used chicken broth and to us didn’t seem very creamy, like a potato soup should be. So I created this one!

Bacon Potato Soup:

Ingredients-

  • 6-7 Medium Potatoes
  • 2 10.5 oz cans Cream of Chicken Soup
  • 2 “cans” of Milk (*I’ll explain below)
  • 1 14.5 oz can Chicken Broth
  • 2 tsp Onion Powder (heaping)
  • 1/4 tsp Pepper
  • 1 package Bacon
  • 2 bricks Cream Cheese

Directions-

Put the two cans of soup and the chicken broth into the crockpot. *Use the empty soup cans and fill with milk (both or just do one can twice. I use both to help get all the stuck soup out of the can). Add the onion powder and pepper. Mix well. At this point I turn on the crockpot on low. Peel and cut up the potatoes into small chunks. Carefully add them to the soup mixture in the crockpot (it will splash). Cover. Cook the bacon until it’s crispy. Break into small pieces and add them to the soup. Let cook for at least 8 hours on low. I don’t know how long for high since we have never cooked it on high before. Once it’s cooked for 8 hours cut up both cream cheese blocks into small squares and mix into soup. Cook for another hour, stirring every once in awhile to make sure the cream cheese mixes in good.
Serve in bowls or your favorite bread bowls. Enjoy!

We haven’t been able to find a good bread bowl recipe yet, so we just buy them from Winco. We think they are yummy!
