Pizza Friday

  Tonight I made individual pizzas. I used pre-made biscuits (you know, in the tube that you keep in the fridge), my homemade pizza sauce, shredded mozzarella cheese, and pepperonis. I gently smooshed and pulled the biscuits so they were bigger. Then I put the pizza sauce on it. I added about a handful of mozzarella cheese on top of the sauce and put pepperonis on half of them (4 biscuits). I cooked them at 350° for about 15 minutes (we have a convection oven). Once the cheese was a golden brown I pulled them out and put them on plates. I didn’t cut them, but I should have. Meal Planning

  I have always had a hard time deciding on what to make for dinner. When I would finally decide, then it would either take to long to make, or we didn’t have everything we needed. So then I’d have to make something out of what there was, or go to the store and end up spending more money because we would grab lots more things.  So several years ago I decided to make a dinner calendar. I found a template in Excel, you can change the year and the days automatically change, and the squares are blank so you can type in the meals. Then once a week we would go to the store and get everything we needed for that week of dinner meals (and anything else we needed). It helps out so if the dinner takes time to make (crockpot, make bread, etc.) then I can start in the morning. Also, we are only going to the store once a week so we spend less money. We are all picky eaters (in one way or another) and some of us have allergies (shellfish and garlic) so it limits our choices. When we find a m...

Bacon Potato Soup

We found a recipe for potato soup on the Internet. It had stuff that we didn’t want in it (like celery and onions) and stuff that was missing. Also, they only used chicken broth and to us didn’t seem very creamy, like a potato soup should be. So I created this one! Bacon Potato Soup: Ingredients- 6-7 Medium Potatoes 2 10.5 oz cans Cream of Chicken Soup 2 “cans” of Milk (*I’ll explain below) 1 14.5 oz can Chicken Broth 2 tsp Onion Powder (heaping) 1/4 tsp Pepper 1 package Bacon 2 bricks Cream Cheese Directions- Put the two cans of soup and the chicken broth into the crockpot. *Use the empty soup cans and fill with milk (both or just do one can twice. I use both to help get all the stuck soup out of the can). Add the onion powder and pepper. Mix well. At this point I turn on the crockpot on low. Peel and cut up the potatoes into small chunks. One of the times that Nick was out of town working we went with my parent's and my Aunt Lorena to Cracker Barrel for Brunch. It was after one of Brichette and Xander's T-Ball games. We had fun, but wished Nick could have been with us, and Zain got to use his high chair that hooks onto the table. It is so awesome. It is one of the best things we've bought! We really like Cracker Barrel, but wish we had one closer to us so we could go more often. My mom and Brichette being silly! Playing checkers Zain eating his first orange. He loved them.
