Sourdough Snickerdoodle Cookies

  Today I looked through some saved recipes, read up on cream of tartar (to see if my cookies actually needed it) and created this recipe. Cream of Tartar (how do you say it Tar-Tar or tarter?) is needed for this recipe. It interacts with the baking soda, which makes the cookies puff up and then flatten out when cooling off. It also is what gives snickerdoodles their signature cracking. Here is the recipe: Sourdough Snickerdoodle Cookies Ingredients: 1 3/4 c Granulated Sugar  3/4 c + 2 tbsp Softened Salted Butter 2 Large Eggs 3/4 c Sourdough Starter 3 1/2 c Flour 1 tsp Baking Soda 1 1/2 tsp Cream of Tartar 1/2 tsp Salt Directions: Preheat your oven to 350°. Sourdough Pumpkin Chocolate Chip Cookies

  I have had my  Sourdough Starter  for almost 2 years now! About a year ago I started putting it in a lot of recipes, but especially dessert recipes. I looked up some sourdough pumpkin recipes and adjusted them for me. So here is my recipe for them. I do have to add more flour being at a high altitude. If you are not, you won’t need as much flour. Sourdough Pumpkin Chocolate Chip Cookies Ingredients: 1/2 cup Salted Butter 1 tbsp Pumpkin Spice 1/4 cup Sugar 1/2 cup Dark Brown Sugar 1/3 cup Pumpkin Purée 1 tsp Vanilla 1/2 cup Sourdough Starter (fed or unfed) 2 cups Flour 1/4 tsp Baking Soda 1/4 tsp Baking Powder 1/2 tsp Salt 1/2 cup Mini Chocolate Chips Directions: Preheat oven to 375°. In a small saucepan brown the butter stirring frequently. It takes about 5 minutes over medium heat and will have a nutty aroma. Remove from heat and stir in the pumpkin spice. National Chocolate Chip Cookie Day

  Today is national chocolate chip cookie day! What a great day! 😂 Here is my recipe for  Sourdough Chocolate Chip Cookies   My family LOVES these. It makes about 3 dozen. I added more flour and water to my  Sourdough Starter  so I had enough for cookies and  Sourdough Mini Pizzas  (since it’s Friday night, which is pizza night in our house). I have a whole  List of Dinners  that I make a  Monthly Dinner Calendar  from.

3 Ingredient Chocolate Pie

  We use only three ingredients for chocolate pie. Pudding mix, milk, and a premade chocolate pie crust. Here is the recipe. Chocolate Pie 1 5.9 oz. box Chocolate Pudding 3 cups Milk 1 chocolate pie crust Follow directions on pudding box (whisk milk and pudding mix for two minutes). Dump into pie crust. Refrigerate for at least 1 hour. Then cut into pieces. Serve with whipped cream, if desired. That’s it!

Favorite Pie

Today is pi day. So for day 14 of our photo challenge we chose your favorite pie. My favorite pie is cherry, pumpkin, or triple berry.  Nick loves chocolate pie.  Our children love those too. I have only made a couple of pie from scratch before.  One was a pumpkin pie for my work (when I was working) several years ago.  I made it with a sugar substitute, because we were trying to be healthy, and it was not good.  The ladies in the office liked it, but I did not.  The others have been chocolate pie, which I used a pudding mix and oreo crust. We usually buy the frozen pies in the freezer section of the grocery store, and they are pretty good. JoElla makes the best pumpkin pie I have ever had!!  Costco has the second best. National Chocolate Cake Day

Yesterday I made Sourdough Chocolate Cupcakes for National chocolate cake day. They are more of a dark chocolate cake, but so good. They also are very dense, but again, so good! We had a busy day yesterday so I didn’t get this posted. We get together with my “brother” Jeff, his wife Abbie, and his two boys every other Friday for movie night. It’s so fun! Sometimes we don't get a movie watched... sometimes we play games or just talk.  It's a wonderful time! I know you want it, so... Here is the recipe for the cupcakes. Vanilla Buttercream Frosting

  I don’t usually use a recipe for frosting. I just wing it. But I decided I would share what I do. 🤣 If you don’t need a lot of frosting (this will frost about 12 cupcakes) this is a great recipe. You can double it and cover a cake. 1 stick of Butter, softened  Powdered Sugar 1 pinch of Salt 2 tsp Vanilla 3 tbsp Milk In a bowl mix together the butter and about 1/4 cup powdered sugar. Once mixed add salt, vanilla, and milk. Stir. Add in powdered sugar until it’s the thickness you want. Add in food coloring. If you don’t use the gel food coloring, you may need to add more powdered sugar.  Enjoy!

National Opposite Day

  Today is National Library Shelfie Day and National Opposite Day. So I decided we would eat dessert first and then eat dinner. 🤣 We had cake and then dinner. It was so fun! Dinner: I made homemade dinner rolls, parmesan noodles, and bacon wrapped chicken stuffed with 3 different cheeses and chicken cordon bleu for those of our kids that don't like the bacon wrapped chicken.

National Peanut Butter Day

  Today is National Peanut Butter Day, so I made some peanut butter cookies. I’m not a fan of peanut butter, but most of my family is. I just used a Betty Crocker mix, then melted chocolate chips with a little bit of milk, and dipped half the cookie in the melted chocolate. I also put some homemade raspberry jam on three of them, for a PB&J cookie. Do you like peanut butter cookies or just peanut butter in general?

National Blonde Brownie Day

This   Sunday January 22, 2023 was National Blonde Brownie Day (or blondies).  So, I made sourdough ones, and they are delicious, if I do say so myself.  One of the things I have longed to do is make things on my own.  I'm not quite there yet, but I can combine and adjust multiple recipes and add in things that we want and take out things that we don't and make them my own.  So, like I said, almost there.  I found several recipes on Pinterest and took things from all of them, then added in some sourdough starter, and made it my own.  Heavenly Father is helping and blessing me by fulfilling a desire of mine, and I am so very grateful! Caramel Popcorn

Today I made caramel popcorn. I got the recipe from Nick’s mom Caramel Popcorn 1/2 cup (1 stick) Butter 1/2 cup Light Corn Syrup 2 cups (packed) Dark Brown Sugar 1 tbsp Water 10-12 cups Popped Popcorn 1 tsp Baking Soda Line a baking sheet with parchment paper and spray with cooking spray. Bring the first 4 ingredients to a boil in a medium saucepan on medium heat stirring constantly. Just as it’s getting to boil, spread the popcorn onto the baking sheet. Once boiling, add in the baking soda and stir until lighter in color and “airy”. Pour over the popcorn, and mix until it’s all coated. Let cool and enjoy.

Sourdough Chocolate Chip Cookies

These cookies are delicious! If I do say so myself!  I tried making some before, but I didn’t add enough flour. I remade them, with more flour, and they are so much better! Here is the recipe: Ingredients: 3/4 Cup + 2 Tbsp of Butter at room temperature(I used salted) 1/2 Cup Granulated Sugar 1/2 Cup Packed Dark Brown Sugar 1 Large Egg room temperature (I just got a fresh one from our hens) 3/4 Cup Sourdough Starter 1 Tbsp Vanilla Extract (I used Mexican Vanilla) 2 1/2 Cups Flour (I used all purpose) 1 Tsp Salt 1 Tsp Baking Soda 1 Bag 12 oz. Semi-Sweet Chocolate Chips Directions: In your mixer add the sugars and butter, mix well. Add the egg and mix until it’s incorporated. Stir in the sourdough starter and vanilla extract. In a separate bowl mix the flour, salt, and baking soda, then add to the mixer with the other ingredients. DO NOT over mix (just mix until it’s well combined). St. Patrick’s Day

  As I said in  This Post - St. Patrick’s Day 2021  we love to have fun and celebrate the holidays. This year I dyed our rice green, made green sugar cookies with rainbows, wore green, and watched Darby O’Gill and the Little People.

2 Ingredient Fruit Dip

My family and I love this dip. It’s yummy on any fruit, at least all the fruit we’ve tried. Plus  It’s so easy to make. Fruit Dip: 1-8 oz. Bar Cream Cheese 1-7 oz. Jar Marshmallow Creme Put cream cheese in a bowl and get it to room temperature (it’s a lot easier the mix). Sometimes I put it in the microwave for 10-15 seconds, if I’m in a hurry. Then add the marshmallow creme and mix. That’s it! Enjoy! Here is a picture of the finished product on our homegrown strawberries! 🍓 😋
