Chicken Hoagies

  This is a recipe from Nick's mom.  I'm not sure how long they have been making it, but it was before I married Nick. I make it different than they do.  They use un-breaded chicken tenders, but I have a hard time biting into them (it's a texture thing) so I use the canned chicken and shred it.  There are so many different ways you could make these... Chicken Hoagies Ingredients: 1 10oz. Can Chicken (you could use the 12oz. can as well) 3 cups Shredded Cheese 1 tbsp Onion Powder 1/2 tbsp Paprika Powder Pinch of Pepper 1 tsp Salt Hoagies or French Bread Directions: Heat oven to 375°. Butter both sides of the bread and place on a baking sheet (I lined the baking sheet with aluminum foil for easy clean-up).  Once the oven is ready, place the bread in the oven for about 5 minutes to toast it.  While the bread is toasting, combine the chicken, 2 cups of cheese, and spices in a bowl. Chicken and Dumplings

  About 10 years ago when we would have dinner at my parent's house every week, once in a while my dad would buy these Campbell's soup chicken and dumplings dinners. They were delicious.  For a while now we haven't been able to find them. I found a few recipes on Pinterest.  Most of them included ingredients that we can't cook with because we have picky eaters in our family and allergies.  So I created my own. Here it is... Just a note first… I dump the cream of chicken soup in the crockpot, use the cans from the soup to measure the milk, then whisk it together with the herbs. It mixes better. Also if you like the soup thicker, you can add in 6 tbsp of cornstarch dissolved in 6 tbsp of water after it’s cooked for 2 hours and before you add in the dumplings. Taco Seasoning

  With allergies and picky eaters in our family we make a lot of things from scratch. Taco seasoning is one of them.  I start out by browning the meat with salt, pepper, and onion powder. I know that most people would tell you that you shouldn’t cook that way, but I think it gives the meat more flavor and makes the house smell so good! I should just mix a whole bunch of the seasonings together and then I wouldn’t have to add everything every time, but I haven’t done that yet. 😆 Here is my recipe for taco seasoning for 1 pound of ground beef. Taco Seasoning Ingredients: 1 tsp Salt 1 tsp Onion Powder 1/4 tsp Black Pepper 1/2 tsp Cumin Powder 1/2 tsp Chili Powder 1/2 tsp Paprika Powder Directions: Like I said… I put the onion powder, salt, and pepper on while I brown the ground beef. Once it’s brown and most of the moisture is cooked out then I sprinkle the cumin, chili, and paprika on the meat. I mix until it’s well mixed. Then serve with taco shells or tortilla chips.

Hamburger Macaroni Dinner

We’ve made this dinner a few times. It’s so easy, quick, and only has a few ingredients that you probably already have at home. We got the recipe from someone on Pinterest, but we had to change it due to allergies, and I’ve added some stuff in, so I changed the name. It only takes about 30 minutes to make. Hamburger Macaroni: 1 lb. Ground Beef 1 tbsp Onion Powder 2 tsp Salt 1 tsp Black Pepper 2-8 oz. cans Tomato Sauce 2-8 oz. cans (from Tomato Sauce) Water 1/2 tsp Chili Powder 2 tsp Worcestershire Sauce  1 tbsp Mustard In a large pot add the ground beef and brown on medium heat. While browning the ground beef, add the onion powder, salt, and pepper. Once the beef is browned and most of the fat is cooked out, add all the ingredients to the pot. Cover and cook over medium heat for 12 minutes, or until the macaroni is tender, stirring occasionally so the macaroni doesn’t stick to the bottom. Serve with cheese or your favorite toppings.  You could also have a green salad and rolls...

Mac & Cheese Bake

I haven't made a mac & cheese from scratch before. So hopefully this turns out good.  I'll let you know...   Here is the recipe : 3 cups Elbow Macaroni 8 tbsp Butter 6 tbsp All-Purpose Flour 1 tsp Salt 1/2 tsp Black Pepper 1/2 tsp Onion Powder 3 cups Milk 2 1/2 cups Shredded Cheddar Jack Cheese 1 package Ritz Crackers crushed up (mixed in 3 tbsp melted butter) 1 1/2 cups shredded Parmesan Cheese Preheat oven to 375°  Cook macaroni according to the package.  While it's cooking, in a saucepan melt the butter over medium heat. Add the flour, salt, pepper and onion powder. Mix until heated and well combined (a couple minutes). Slowly whisk in the milk. Turn up the heat and bring to a boil and then cook a couple minutes until thickened. Turn down the heat and add in the Cheddar Jack cheese. Cook until well combined and melted. Chicken and Rice Dinner

I am trying to be better about taking photos/videos when I’m making dinner so I can share the recipes. I’m still not the best, but I’m getting better. Nick’s mom makes this recipe and our kids absolutely love it. Tonight I made it a little different than normal. I added chicken broth in instead of milk. I wanted to see how it tasted. Truthfully I didn’t notice a difference, so using either one or both doesn’t make a difference. Here is the recipe 2 cans (10.5 each) Cream of Chicken Soup 2 cans (use the soup cans) Milk or Chicken Broth 1 cup Rice (we use white long grain) 2 or 3 Boneless Skinless Chicken Breasts 1 tbsp Onion Powder 1/2 tsp Ground Black Pepper Preheat oven to 375°. Spray a 13 x 9 baking Dish with cooking spray (or you could brush with oil) In a mixing bowl put in the rice and add HOT water, just until it’s covered. Then cover the bowl with a towel or aluminum foil and let sit 5-8 minutes. Carefully drain the water. Add 1 can soup, 1 can milk, 1/2 tbsp onion...

Peach Chicken

I have been trying to find a good recipe for orange chicken. I still haven’t found one, but in my search I came across one recipe that called for orange jam. Well, we don’t have that. We have strawberry, grape, and raspberry that we make. Then I thought, oh! We have peach jam that my aunt makes. So I substituted it for the orange and… WOW! It is delicious!! So here is the recipe: although, unless you have my aunts homemade jam, it might not be as good. 😉 1 cup peach jam 1 cup bbq sauce (we use Sweet Baby Rays) 1 tsp Onion Powder Sprinkle of Soy Sauce 2-3 chicken breasts cut in chunks Add all ingredients into a crockpot. We just use a few squirts of the soy sauce because we are not to big on it. However, if you like it you can add as much as you want.  Cook on low for 6 hours or on high for 4.  We use our rice cooker and make some white rice to go with it.

Dinner - Porcupines

One of everyone’s favorite dinners is Porcupines. It’s an easy dinner to make and is delicious. Here is the recipe: 1 lb. Ground Beef 3/4 cup Uncooked Rice 2 8 oz. cans of Tomato Sauce 1 Egg 2 tbsp Worcestershire Sauce 1 tbsp Onion Powder 1 tsp Salt 1/2 tsp Ground Pepper Water Soak rice in hot water for 5-7 minutes. Drain. Add ground beef, egg, salt, pepper, and onion powder. Mix well. Shape into balls. Place in hot sauce pan and brown. Add tomato sauce, Worcestershire sauce, and 2 cans of water (I use the tomato cans). Swirl sauce pan to mix all together. Place lid and simmer 60 minutes (until most of the water is cooked out and the sauce is thick). We serve these with homemade dinner rolls. Here are some pictures: Brown them: After simmering.
