Chicken and Rice Dinner
I am trying to be better about taking photos/videos when I’m making dinner so I can share the recipes. I’m still not the best, but I’m getting better.
Nick’s mom makes this recipe and our kids absolutely love it.
Tonight I made it a little different than normal. I added chicken broth in instead of milk. I wanted to see how it tasted. Truthfully I didn’t notice a difference, so using either one or both doesn’t make a difference.
Here is the recipe
- 2 cans (10.5 each) Cream of Chicken Soup
- 2 cans (use the soup cans) Milk or Chicken Broth
- 1 cup Rice (we use white long grain)
- 2 or 3 Boneless Skinless Chicken Breasts
- 1 tbsp Onion Powder
- 1/2 tsp Ground Black Pepper
Preheat oven to 375°. Spray a 13 x 9 baking Dish with cooking spray (or you could brush with oil)
In a mixing bowl put in the rice and add HOT water, just until it’s covered. Then cover the bowl with a towel or aluminum foil and let sit 5-8 minutes. Carefully drain the water. Add 1 can soup, 1 can milk, 1/2 tbsp onion powder, 1/4 tsp pepper to the rice. Mix well. Pour in the baking dish. Cut up your chicken into chunks (you can leave them while, but then they will take longer to cook) and place on top of the rice mixture in the baking dish. In the same bowl mix the other can of soup, milk, onion powder, and pepper. Carefully pour over the top of the chicken. Cover the baking dish with aluminum foil and bake for 45 minutes. Then pull out the baking dish, take off the aluminum foil and mix everything together. Cover with the aluminum foil again and bake another 10-15 minutes. Then pull the baking dish out again. Make sure the internal temperature of the chicken is 165° or higher and the rice is soft. If so, it’s done and ready to eat. If not cover again and bake until the chicken is 165° inside and the rice is soft. If you like it to be a little browned, you can place it back into the oven, uncovered, and bake a couple minutes to brown.
Serve with salad, or whatever you’d like.
